Baseball Lacing Craft

Fine motor skills are often ones that traditionally marketed boys games and toys aren't as focused on as many girls are. To encourage the uninterested child ( boy or girl) make something in a theme they love, like this baseball lacing card.

1. Gather your materials. You will need a paper plate, hole punch, yarn, tape, scissors and a marker.

2.Start by cutting the middle of the paper plate out and drawing stitching on it with the marker.

3. Using the hole punch , punch holes along the stitching.

4. Cut a piece of yarn long enough to thread through the holes with slack. Tape the end on the back of the ball.

5. Wrap the end of the yarn with some tape to make it easier to thread.

Christmas Shopping...in September?!

OK, here's a serious question for you-- have you started your Christmas shopping yet?

If you are anything like me, the thought of Christmas hasn't even entered your mind yet.

Last I checked, it's September. In my opinion, it's still practically summer. I haven't put away my sun dresses, I'm still wearing flip flops, and I know, deep down, we still have a few 80+ days left before the real cold weather comes our way.

So, imagine my surprise when I saw on Facebook that several of my friends have already started shopping for Christmas.

Really?? Are they really that organized?? Or are they just trying to make everyone else jealous of their admirable ambition? And, the real question is, why would you even WANT to start thinking of Christmas at this point?

It seems each year, the seasons get shorter and shorter. Summer is apparently over once the 4th of July has come and gone. Back to school supplies appear at the end of July. Halloween supplies start popping up at the end of August. And now, apparently, Christmas shopping start in September.

What happened to the Christmas shopping season? You know, the one that starts after Thanksgiving, which is still over 2 months away. In my opinion, that's when Christmas shopping should occur. There's something about that time of year that really instills the Christmas spirit in me.

So, to all my friend who have started Christmas shopping-- I admire your go get'em attitude, but really...slow it down. Enjoy the fall. Pick apples, drink hot cider, and take a hike outside. Leave the Christmas shopping for the appropriate time of year...winter.

Horseradish Sauce

Horseradish is one of my favorite flavors, and yet, not very common in most recipes or cuisines. Perhaps it is my strong Eastern European heritage, with its cuisine that often incorporates horseradish, that is accountable for my love of horseradish; but I think more likely, it is just the wonderful flavor I enjoy.

Horseradish is commonly used in cocktail sauce, the vibrant tomato condiment used for seafood. It is also wonderful when paired with potatoes or meat. But recently I started tinkering around in the kitchen to come up with a new application for horseradish. After a few thoughts on using horseradish that weren’t up to par, I came up with a simple horseradish sauce that was a home run.

We used this sauce on green beans (with some chicken sausage, sauerkraut and pierogies—the perfect Eastern European dinner, in my humble opinion), but it could be paired with anything you desire. The recipe below has a mild to medium horseradish “kick” to it, but you can easily adjust the flavors to your palate.

Horseradish Sauce

1 tablespoon butter
1 tablespoon all purpose flour
½ cup skim milk
1 ½ tablespoons prepared horseradish
1 teaspoon brown mustard
½ teaspoon salt
¼ teaspoon ground pepper

In a small sauce pan, heat the butter over medium heat until it melts. Add the flour and cook for 1 minute, just to cook the raw taste out of the flour, and until the flour is fully incorporated into the butter.

Add the milk and whisk vigorously as to ensure the flour doesn’t lump until the sauce is fully mixed. Cook for 1-2 minutes, or until the sauce thickens.

Remove from heat. Add the horseradish, mustard, salt and pepper and stir to fully incorporate.

Taste, and add more horseradish as desired.

Makes about 2/3 cup sauce.

Fan Letter Writing!

Getting kids writing can sometimes be a challenge. One fun and authentic writing lesson is to write a fan letter to their favorite athlete. My son is wild about Ichiro so we looked up the fan mail address on his team website , sat down and wrote. My son is only 3 so he dictated the letter to me and I wrote but he drew a picture to go with it. Then the learning was still not over. We took a field trip to the post office, bought a stamp, and mailed the letter away.

It's amazing what a huge hit this was and how with a little creative thinking a reluctant writer can find excitement in the task.

Sports Week- Kick Off!

This week I have been thinking all about sports! These are all quiet sit down activities for your normally loud, constantly moving sports fan. Save them for a rainy day or another time when playing sports isn't an option.

Painter's Tape Pigskin

It's football season ( groan) and this was an easy and quick craft my son really enjoyed.

1. Gather your materials. You will need some cardboard , painters tape, a sponge paint brush, brown paint, markers and scissors.

2. Start by drawing a football. Using the painters tape tape off the stitching.

3. Paint !

4. Let dry and peel the tape off.

5. Cut it out.

Marking time

When I posted the link to Monday's piece on my Facebook profile a friend commented that she knew someone who used the jar-and-bead method to help her child countdown days until her dad's return from deployment to Iraq. I thought this was a wonderful and tangible way to help a younger child "see" the passage of time--something so many small children have trouble doing.

Her comment reminded me immediately of a countdown calendar we made for L., when he was just barely four years old. I still have the calendar tucked into a keepsake folder containing odds and ends from T.'s surgery when she was six months old. After her nearly seven-hour operation, T. was hospitalized for five days, and I spent them all with her. On Day One out of the PICU unit I asked the hospital to change out the scary metal high-sided hospital crib for a bed, and I slept with her each night, curling my body protectively around her while she tossed and thrashed. During the day Scott's mom would bring L. by to visit, and he'd hang out with us in the hospital room, but the nights were excruciatingly difficult for him to get through. Before we left for the hospital I made a calendar, and blocked out the days we would be gone. For each day of the week I wrote in a treat he would get: ice cream one day, a small toy the next, a special outing, and so on. We hung the calendar on the wall next to his bed and attached a red crayon to a string so it could hang near the chart and X out the days as they went by.

We didn't know then how difficult marking time would be for L.; that he would go on to struggle with concepts of time, for years and years (he still does), long beyond his early schooling. Yet instinctively we had a sense that making that calendar would be empowering for him; that he'd better understand how to get through the days if he could see them tangibly, and interact with them.

We still use calendars and time charts today--perhaps not as often as we should. L.'s gotten a little better at telling time, but still struggles with time as a concept. My friend's comment the other day reminded me how important it can be to revisit some of the tricks we might have used when L. was young--a little tweaking, a little creative repackaging, and they can still go a long way in helping him become a master over his time.

Tuesday's Tip: Make One, Make 'Em All

It is hard to believe, but we are nearly one month into first grade for R. This year, so far, has gone incredibly smooth, a lot more smoothly than I had imagined. Sure, some days R comes home exhausted, and therefore, grumpy, but most days, a little down time and a snack are all he needs to cure his “phew, I had a long day at school-itis.”

As an aside, it is amazing to me how much he eats and drinks at lunch can affect his after-school mood. On the rare occasions when he is really grumpy, I’ve looked to find a barely touched lunch or a water bottle that is still full. I have to remember that he is only 6, and sometimes he gets distracted or forgets to eat a full lunch, but I keep trying to gently remind him how important eating a good lunch is without hounding the poor boy. Amazingly, after a good snack and drink, his mood transforms back into my usual happy little guy.

While R adjusts to eating lunch at school, I am trying to adjust to making and preparing lunch every night. With our early morning deadline to make it to the bus, it is essential that I make R’s lunch or at least the majority of it the night prior. If he takes something that is going to be warm in his thermos, I pack all of his other items, and merely heat up the item before packing it up too. This whole “make it the night before” has saved me so much stress, I do not even want to imagine.

But even my best planning sometimes goes a wee bit awry, like last week when I was packing R’s lunch into his backpack and felt a little fuzzy headed. I zipped up his lunch bag thinking, “there doesn’t seem to be as much as usual in there.” Minutes after he left for the bus I found his diced kiwi (his current favorite fruit) in the fridge and threw shoes on G and I, as I ran after SPH and R to deliver the missing fruit.

All of this is to share that while it has only been a month of packing lunches, I can’t believe it has already been a *month* of packing lunches for this mom. I’ve learned a thing or two, and one tip another mom recently shared with me, I wanted to share with you.

Today’s “Tuesday’s Tip” is this:

When you pack your school-age children’s lunch, go ahead and prepare your younger child(ren)’s lunch as well. This will give you a great deal of flexibility the next day. If you decide to go to a park during lunch, you already have a lunch packed! If you want to go on an outing, lunch is ready. And even if you stay home, what busy mom wouldn’t love a lunch at the ready to give their child? If nothing else, it can help your younger ones help feel connected to their older siblings, a very good thing indeed.

Tilapia BLTs

When I lived in the Washington, DC area, there was a certain restaurant that I loved. It was, to me, the prefect restaurant: hip and cool, but casual and unpretentious. It had a great vibe, but didn’t take itself too seriously, and the menu was incredibly affordable. You could order a simple sandwich or burger or even a pizza, or make it a fancy night out and get a great bottle of wine and wonderful entrees.

I vividly recall one night out with three girlfriends and me, we were going out to celebrate the impending birth of our friend Amy’s second child. It was that special time, just days before she delivered, full of hope and expectation and the realization (especially true with the second child, since you know what to expect!) that one’s life was about to dramatically and wonderfully change.

Anyway, there were the four of us, who all loved to try new and different dishes and shared a love of exotic cooking, and we one-by-one placed our orders…and all ended up ordering the same dish, the Tilapia BLT. I had never had a fish BLT prior to this evening, but we all agreed, after leaving the restaurants very full, that we were very glad we had ordered this particular dish.

This recipe is my attempt to remake the same dish, Sweet Pea style. I’ve made it a couple times and each time it takes me back to that special night full of expectation.

Tilapia BLTs

4 tilapia filets, rinsed and patted dry
2 tablespoons all purpose flour
½ teaspoon salt
¼ teaspoon ground cayenne pepper
1 tablespoon vegetable oil
8 pieces bacon, cooked
8 slices tomato
4 slices Bibb or Boston lettuce
1 avocado, sliced thin
lime
4 toasted Kaiser Buns or thick bread

After rinsing and patting dry the tilapia, mix the flour, salt and cayenne pepper in a shallow bowl. Dredge the fish in the flour, coating it on all sides.

Heat a large skillet over high heat. Add the vegetable oil and then the fish. Cook 3-5 minutes or until you see the edges of the fish beginning to cook. Flip, cook another 3-4 minutes on the other side.

While the fish is cooking, assemble the other ingredients for the sandwich: the bacon, tomato and lettuce.

Slice the avocado and drizzle a bit of lime on top of it (this helps prevent browning but also adds a good zest of flavor).

Place the bacon, tomato, lettuce and avocado on one half of the bun, add the tilapia and check out your meal creation:

Serves 4.

Perhaps it is the assumption that the fish and avocado add to the healthfulness of a traditional BLT, or perhaps it is just the awfully good taste of the bacon paired with the other ingredients, but this is one of my very favorite sandwiches...and the rest of the Sweet Pea family's too!
